11th August 2014 | Leave a comment This recipe has been adapted from one of the keto diet apps that I have been using recently making it dairy free. It’s tasty without cheese but if you’re able to eat dairy you could add some grated cheddar on top. I have made the base and sauce before and frozen them in separate freezer bags and they still cooked/ tasted great once defrosted.Makes 4 separate pizzasFor the base 70g coconut flour 90g almond flour 15g psyllium husk 1 tsp tartar 1/2 tsp bicarbonate of soda 1 tsp garlic powder 2 tsp Italian herbs 2 large egg whites 2 large eggs 205ml boiled water 1/2 tsp saltTomato sauce 160g cherry tomatoes 10g coriander leaves 2 garlic cloves 1 small onion 4 tbsp tomato puree 4 tbsp olive oil 1/4 tsp salt Pinch of black pepperToppings If you are following a ketogenic diet you can add some extra toppings or a side salad but you will need to work them into your daily menu.Cheese (if not intolerant to dairy )Sliced tomatoSliced hamSalamiOlivesPineappleMethod – BaseHeat the oven to 200′Add all the dry ingredients into a bowl and combine.In a jug add the 2 egg whites to the 2 whole eggs (giving you 4 egg whites and 2 yolks)Pour the eggs into the dry ingredients and add the boiled water bit by bit (you may not need it all) and combine using a hand blender.Grease a baking sheet ready to place the bases on. (You can use baking paper but I found my bases stuck to it. Now I use a non-stick baking tray greased with coconut oil)In the bowl split the mixture into 4. Take one of the sections and roll it into a ball then flatten onto the baking sheet. Once all the bases are made place in the oven to cook for 15 minutes.While the bases are cooking make the pizza sauce.After 15 minutes remove the bases from the oven and spread 2 – 3 large tbsp of sauce over each base. Return to the oven for 5-10 minutes (keep checking so they don’t burn).Method – Sauce Add all the ingredients into a blender and blitz until it’s reduced to a sauce consistency. You can store any left over sauce in a jar in the fridge for up to a week or in a freezer bag.Serving suggestions This pizza is so filling and tasty I normally serve it with a simple salad but you could always serve with Cauli-rice or ‘paleo chips’ (made from courgettes, carrots or sweet potato if allowed).
