Apricot Delight Energy Balls
These apricot energy balls are perfect as a little treat with a cuppa or as a pick me up during the afternoon slump. They are very versatile, switch up the nuts or the fruits to create new flavours or try rolling in different coatings to give them some variety.

  1. Place all of the ingredients expect the (4 TBSP) desiccated coconut (for coating) into a blender and blitz until combined.
  2. Scrap small amounts (about 1 TBSP) and roll into a balls – place rolled balls on to a plate.
  3. When all the balls have been rolled, pour the 4 tbsp of remaining desiccated coconut into a bowl and roll each ball in it, until each ball is lightly coated.
  4. Place the finished balls back on the plate and place in the freezer for about 15 minutes or the fridge for 30 minutes to firm up.
  5. Once the balls are firm they are ready to eat! They will keep in the fridge for 7 days.
