Course Main Dish Prep Time 10 Cook Time 40 Passive Time 10 Servings Ingredients150 g Kale230 g Okra Chopped80 g Spring onion Chopped300 g Bone broth Chicken6 g garlic Approx 2 cloves150 g Coconut milk1 tsp thyme Fresh1 Vegetable stock cube I use Kallo1/2 tsp Salt1/2 tsp Black pepper1/2 tsp Cayenne pepper1/2 tsp Paprika450 g Water Course Main Dish Prep Time 10 Cook Time 40 Passive Time 10 Servings Ingredients150 g Kale230 g Okra Chopped80 g Spring onion Chopped300 g Bone broth Chicken6 g garlic Approx 2 cloves150 g Coconut milk1 tsp thyme Fresh1 Vegetable stock cube I use Kallo1/2 tsp Salt1/2 tsp Black pepper1/2 tsp Cayenne pepper1/2 tsp Paprika450 g Water Instructions Over a medium heat, In a large saucepan add the onions, garlic, vegetable stock cube, water and bone broth. When it starts to bubble, add in the thyme, kale and okra. Cover with a lid and simmer for 20 -30 minutes, stiring regular to ensure it dosent stick. Add in the paprika, salt, pepper and cayenne pepper and return to the heat for 5 minutes. Either in a food processor or using a hand held blender stick, blend the ingredients until its smooth. (If using a food processor be careful when pouring to hot mixture into the blending jug). The soup is ready to eat, just pour in the coconut milk, give it a swirl then serve. Recipe NotesYou may need to add in extra water when cooking, as the okra will thicken up the mixture, especially once blendedYou can make this soup and skip the step where you blend it, but it will have a completly different taste to when its blended. If you choose not to blend it, you may need to add extra bone broth/ vegetable stock (approx 2 extra cups of stock) Related
