Kale and Okra Soup – Paleo and Keto Friendly

Instructions
  1. Over a medium heat, In a large saucepan add the onions, garlic, vegetable stock cube, water and bone broth.
  2. When it starts to bubble, add in the thyme, kale and okra. Cover with a lid and simmer for 20 -30 minutes, stiring regular to ensure it dosent stick.
  3. Add in the paprika, salt, pepper and cayenne pepper and return to the heat for 5 minutes.
  4. Either in a food processor or using a hand held blender stick, blend the ingredients until its smooth. (If using a food processor be careful when pouring to hot mixture into the blending jug).
  5. The soup is ready to eat, just pour in the coconut milk, give it a swirl then serve.
Recipe Notes
  • You may need to add in extra water when cooking, as the okra will thicken up the mixture, especially once blended
  • You can make this soup and skip the step where you blend it, but it will have a completly different taste to when its blended. If you choose not to blend it, you may need to add extra bone broth/ vegetable stock (approx 2 extra cups of stock)
