Spicy Cauli-Rice Served with Meatballs and Salad

Cauliflower ‘rice’ is one of the easiest and tastiest dishes you can make. What’s even better is it goes well with meat and fish dishes. To make plain cauli-rice all you need is a blender and some cauliflower. I add a bit of spice to mine to give it some pizazz but you could add any number of ingredients such as veggies or herbs – just like you would with normal rice. The key to this “recipe” (if you could call it that!) is the blender. It won’t work in a liquidiser, trust me. I tried it. It didn’t happen!

Ingredients – 1 serving
100g cauliflower
1 garlic clove
1g red chilli pepper
Dash of salt and pepper
Oil for cooking


  1. Place all the ingredients (except oil) into the blender and blitz until it becomes grainy or ‘rice like’
  2. In a frying pan heat the oil and add the cauli-rice
  3. As it cooks the cauli-rice will change colour slightly turning a golden brown colour
  4. Keep stirring to prevent it from sticking. Cooking should take approximately 5 minutes
  5. Once ready serve and enjoy
