Autumn has finally arrived and there are masses of pumpkins lining the supermarket shelves. If you’re thinking of buying one to carve for Halloween then why not put the scrapings to good use and cook something…. Whether it’s soup, lattes or muffins – I’ve put together a list of my favourite pumpkin recipes. I haven’t tried and tested all of these recipes (I am in the process of doing just that) but am confident you’ll like them – based on my experience making other recipes from these blogs…
Pumpkin Latte – Against All Grain
This latte is delicious and knocks the socks off a sugar filled Starbucks version. If you’re not a fan of coffee or you’re looking for a hot drink to make for the kids then this is for you – just leave out the coffee (the mixture will make 2 servings without coffee). Danielle has some wonderful recipes from breakfast menus to side dishes – it’s one of my favourite blogs.
Pumpkin Soup – Ruled Me
I adore pumpkin soup and tend to cook my own recipe but Craig’s is different to any pumpkin soup I’ve ever tried (in a good way). It’s now my preferred recipe and is up there on my ultimate favourites list – be sure to check out Craig’s other recipes, he has plenty!
Pumpkin Muffins – Paleo Grubs
I love muffin recipes that incorporate veggies because it makes getting one of your five a day that much easier. These muffins have a wonderful flavour and are not too sweet. Paleo grubs have a number of other recipes that I love to make including zucchini chocolate muffins and chicken skillet.
Pumpkin Pancakes – The Nourished Caveman
No pumpkin article would be complete without a pancake recipe – I mean, who doesn’t like pancakes?! Vivica has a number of delicious recipes on her blog so be sure to check them out while you’re there.
Pecan Pumpkin Buttercups – Worth Every Chew
If you’re on the look out for a recipe to boost your (healthy) fats or want to make something to munch after a gym workout then take a look at these – pecan pumpkin buttercups. I’ve only recently come across Lisi’s blog, but I have already bookmarked a number of her recipes that I want to try!
Pumpkin Granola – PaleOMG
Juli at paleOMG has the tastiest looking granola recipe I’ve ever seen. I’ve yet to make it (it’s on my list) but will be doing so very soon. I’m a big fan of making Paleo granola, there’s something satisfying about munching on nutty clusters that you’ve lovingly prepared yourself. Take a look at Julis other recipes whilst your there.
